~ Tangy Tasty Rice ~




South Indians are specialist in variety of rice dishes. When i was doing my internship in Bangalore
i used to have lots of different types of rice varieties during my lunch time. One such dish i loved the most was Tomato rice . It was tangy , spicy and tasty at the same time.This version of tomato rice which i am sharing today i quite a lot different from what south indians prepare. You can say this version is somewhat Bengali style south Indian tomato rice variety.


INGREDIENTS :

1. 2 cups rice
2. 3 tsp oil or ghee
3. 5-6 tomatoes
4. capsicum /carrot ( optional : you can add vegetable of your choice)
5. 1 large onion
6. 2 tsp of ginger garlic paste
7. 2 green chilies
8. 1tsp red chili powder
9.1tsp cumin powder and
10. 1tsp cumin seeds
11. 3 cloves
12.1 cinnamon stick
11. 2 tsp dry coconut
12 .salt to taste



METHODS:

1. Slice the vegetables and onion ( keep them aside)
2. Chop the tomatoes and green chilies and add them in the grinding jar
3.Add cloves, cinnamon, ginger garlic paste, cumin powder and dry coconut into the grinding jar
4.Grind still it makes a smooth and fine paste
5.In a pan, heat the oil or ghee. Add cumin seeds and let them make cracking sound :D
6.When the aroma of cumin release add the onion .
7.Now, add vegetables of your choice and saute till the onion gets brown.
8.After the onion gets brown add the tomato  paste. The measurement should be like if 2 cups of rice then 4 or 4 1/2 cups of the tomato paste.
9. Now add the soak rice
10. If the paste seems less then add water to it and salt to taste.
11. Stir well and cover it till the rice is cooked.
12.It takes hardly 20 -30 minutes to cook .


NOTE:
1.You can add vegetables of your choice.
2. You can add peanuts but i generally skip this step as i don't like peanuts in rice .
