Bengali Sweets are world famous , be it rosogolla or be it lal mohan. You can't just say no to this. If you say 'No' you will definitely regret 😔.
So, today i am going to share a very popular dish made with fresh cottage cheese. Chanar Jelepi or Jalebi , channa means cottage cheese. A very interesting thing about Bengali sweets are that they are basically made with cottage cheese, mostly.But due to their method of making or pattern of sweets are different , so their name changes accordingly. Like in this dish the sweet is of twisted pattern so it is called jelepi or chena r jelepi.

INGREDIENTS :
- Chena or cottage cheese : 500gm,
- Milk Powder : 3 tbsp
- Flour : 2tbsp
- Milk :2tbsp
- Baking Powder : a small pinch
- Oil for frying purpose
- Sugar : 5 cup
- Water 8 cup
- 1 Cinnamon Stick
- Sauf / fennel seeds : 1 tsp
- In a bowl , take chena and mix all the ingredients together to knead into dough.
- Knead it for 6-7 minutes until it is smooth.
- Now take small size dough , place it on your plate and start rolling it back and forth with your hands , it will look like a long rope. Give a twisted shape to this rope like structure.
- Fry these jalebi shaped balls in a medium heat till browned on the both sides
- In other pan start preparing sugar syrup.Add all the ingredients as mentioned above.
- Boil the syrup till you get thick consistency.
- Once the jalebis are fried , pour them into the simmering sugar syrup and cook for 2 -3 minute. Switch off the gas after 2-3 minutes.
- Keep aside for 1-2 hours for the syrup to be soaked.
